We harvest, ferment, and dry our cocoa beans at the plantation using native heirloom beans exclusively from sustainable cocoa farms. We roast our cocoa to maintain high levels of antioxidants and preserve the aroma of Ecuador's "nacional" cocoa variety. The flavor is long and nutty, with a powerful dominant chocolate note, no bitterness, little acidity, and some tannins.
