What is our cocoa powder ?: It is roasted , then ground cocoa beans which are pressed to squeeze the cocoa oil( also called " butter") our of the ground beans. The solid part is in the shape of a disc( Cylinder shape of the hydraulic Press). It is broken down with mechanical hammers into powder.
When we say: 20-22% . It is because we do a gentle press, and leave a lot of the oil with the cocoa solids.The oil/ butter is the fat which carries she flavor.
